Historic Oven Fires Up in Quorn’s New Spirit of the Flinders Bakery
Every small town deserves a bakery, and for Quorn, that’s a gap Leah and Alby Trotta are set to close, with the Spirit of the Flinders Bakery officially opening.
For the past few weeks, the smell of fresh bread has once again drifted through the streets of Quorn. The massive wood-fired oven has been brought back to life after laying cold and dormant since 1957.
Alby – amongst many other talents – is a baker by trade , seizing the opportunity to reinvigorate the historic bakery when they bought the adjoining newsagency building in late 2024.

All Spirit – A Sister Business for Flinders Gin
For the Trottas, it is more than an expansion to their business portfolio, it’s a treasured opportunity to restore and rebuild what was once a cornerstone of the Quorn community.
Leah and Alby have a passion for showcasing what the region has to offer, an unmistakable undertone in their craftsmanship at their Flinders Gin distillery – sourcing ingredients and inspiration for flavours locally.
This approach carries through to their baking, sourcing single-origin flour made with grain from nearby Orroroo. Pairing this authenticity with the charm of a traditional wood-fired oven will offer an experience you won’t see anywhere else, adding yet another drawcard for the historic town.
In the area between the bakery and the newsagency, the Trottas have transformed the open space into an inviting, rustic, alfresco area – complete with ‘Howard’ the 1960’s Zestline caravan. This area will offer another layer of charm for customers to relax and enjoy the baked goods on offer.

“Quornish Pasty” to Feature on Bakery’s Boutique Menu
Locals have had a few sneaky snacks while the oven has been tested. Alby’s breads and donuts have been snapped up within minutes – no doubt an indicator of the popularity when the doors officially open!
A boutique menu will vary throughout the seasons, with the key focus on fresh and in-season.
Offerings expected to make the menu include meat, cottage, and pepper pies, sausage rolls, a variety of pasties including the much-awaited return of the Quornish pasty. Breads will cycle between Sourdough – using the special ‘Quornelia’ ferment – and, with a nod to Alby’s Italian heritage, ciabatta and focaccia. Of course, there’ll be sweet treats for dessert – because who doesn’t love a good donut?
